  • 8 medium eggs
  • 1 Sabelli mozzarella
  • 100 g of bacon
  • Extra virgin olive oil, salt, black pepper to taste

Method

Break the eggs in a bowl, add salt and pepper and mix thoroughly. Grease an oven tray or the individual moulds that you want to use to shape the tortillas. Pour the beaten egg into the mould and bake in a preheated oven at 180°C for about 10 minutes. Cut the mozzarella into thin slices and the bacon into very fine strips. Take the tortillas out of the oven, they should be golden brown but still soft, and stuff the surface with mozzarella and bacon. Grate in the oven on grill mode for 5 minutes, or however long it takes for the mozzarella to melt and the bacon to brown. Take your tortillas out of the oven or, if you have used a single mould, cut the omelette into chequered pieces directly from the cooking tray. Serve immediately.
