- 4 cod fillets
- 250 g of Sabelli stracciatella
- Mayonnaise to taste
- Pistachio granules to taste
- 1 cucumber
- Valerian salad to taste

Method
Cut the slices of black bread and set them aside. Coat the cod fillets with pistachio grains and toss them in a pan with a little oil and salt. The next step is to take a slice of bread, spread it with mayonnaise, place the thinly sliced cucumber on top, the cod fillet with pistachios, and finally the stracciatella. Then add the valerian and cover with a second slice of bread already spread with mayonnaise and repeat all the steps to form another layer. Garnish the last layer with stracciatella and decorate with chopped pistachios.

Stracciatella is considered the ancestor of burrata, which was created in the 1900s in Apulia to recover mozzarella scraps by taking the water from the spinning process and recovering the fat part of the whey. Mixing the residue with cream and covering it with spun paste, burrata is obtained.
