A starter like this will give your dinner a special boost. The stringy scamorza will be a surprise for your guests, who can enjoy these patties in their fingertips.

- 100 g of raw ham
- 200 g of mixed minced meat
- 1 Sabelli white scamorza
- Lemon peel
- 2 eggs Breadcrumbs to taste
- Extra virgin olive oil, salt to taste

Method
Chop the ham in a blender. In a bowl, flavour the minced meat with the lemon zest and add the minced ham. If you want to obtain a softer meatball, you can bind the mixture with an egg yolk. Cut the scamorza into cubes. Take one cube and form the meatball around it with the chopped meat. Roll the meatball in the egg and then in the breadcrumbs, to which you have added a pinch of salt. Repeat the operation another time to obtain a double crispy breading. Fry in plenty of oil for a couple of minutes until golden brown. Serve immediately.
