A polenta with our lactose-free mozzarella and mushrooms. A first course that already makes your mouth water!


Ingredients for

4 servings


  • 250 g of instant polenta
  • 1 Sabelli lactose-free mozzarella
  • 150 g of mushrooms
  • 2 sprigs of thyme
  • Extra virgin olive oil, salt to taste
  • Attrezzature required: four ceramic ramekins suitable for baking in the oven

Method

Boil 500 ml of salted water. When it boils, pour in the polenta flour and cook, stirring constantly, for the time indicated on the package. Cut the lactose-free mozzarella into cubes. Add the mozzarella to the hot polenta and stir. Clean the mushrooms and slice them finely, season with salt, oil, and a few thyme leaves. Pourthe polenta into the ceramic ramekins and complete the seasoning with the chopped mushrooms and thyme. Bake in the oven at 200°C for about 5 minutes. Remove from the oven and eat after a few moments. If you wish, you can complete the dish with a drizzle of oil or a handful of Parmesan cheese.

Polenta is a simple, nutritious, and very light preparation; the combination with mozzarella is ideal to maintain the delicate flavour of the corn, but if you want to make it even tastier, we recommend adding some diced Sabelli scamorza to the mozzarella.
