- 400 g of paccheri
- 150 g of Sabelli smoked scamorza
- 2 courgettes
- 1 sachet of saffron or 10 pistils
- Salt and black pepper to taste

Method
Cut the courgettes into cubes, removing some of the white inner pulp if there is excess. If you use saffron in pistils, soak them in warm water. Scald the courgettes in a frying pan with a little oil. Deglaze with white wine or water, add salt to taste, and continue cooking on a low flame for about 10 minutes. Add the saffron powder or pistils to the sauce and stir. Chop the sliced scamorza in a mixer. Boil the pasta in salted water and drain. Stir-fry the pasta in the pan and add the scamorza at the end of cooking. Stir quickly and prepare the dishes by adding a handful of scamorza to each portion.

As an alternative to scamorza, you can use provola or caciocavallo, varieties that all belong to the pasta filata cheeses.
