An ideal spoon dessert to end every meal with a light heart. Perfect with strawberries, but also with cherries or peaches.

- 350 g of Sabelli ricotta
- 250 g of strawberries
- 150 g of icing sugar
- 1/2 vanilla bean

Method
Wash the strawberries, remove the top, and cut them into cubes. Using a hand blender, blend half of the diced fruit and add a tablespoon of icing sugar. Keep the coulis to one side for finishing the dessert. Place the ricotta in a bowl, add the icing sugar and the seeds that you have obtained by cutting the vanilla pod with the tip of a knife. With the aid of an electric or hand mixer, beat the mixture beat the mixture until it is smooth and creamy. Fill the cream into a piping bag. Form the cake using two bowls or small glasses as containers. Place a spoonful of strawberries and a spoonful of coulis at the base, then use the piping bag to spread the ricotta cream over the fruit.
