  • 4 cherry tomatoes
  • 2 salad leaves
  • 200 g of Sabelli burrata
  • 300 g of shelled prawn tails
  • The rind of 1/2 lemon
  • Breadcrumbs to taste
  • Extra virgin olive oil, salt to taste

Method

Clean the tomatoes and cut them into slices. Wash the salad and slice it finely. Coarsely chop the burrata in a small bowl. In a bowl, add the shrimps, season with salt and oil, and complete with grated lemon zest. Blend briefly and add a pinch of breadcrumbs to firm up the mixture. Shape the buns into mini burgers of the diameter of the buns, about a centimetre high. To do this, you can use a pastry cutter or simply shape them by hand, taking care to always have wet hands to work the dough better. Cook in a non-stick frying pan for 2 minutes per side. Dress the sandwich with salad, tomato, prawn burger and finish with a generous dollop of burrata.
