Burrata in Foglia Take-away
350 g
Method
Rinse the mussels carefully and remove the beard. Heat the oil in a pan and add the mussels, turn up the heat to maximum, and cover with a lid until they open. Drain the burrata and cut it into four parts with the help of scissors. Boil the gnocchetti in salted water and toss them in the pan with the mussel sauce. Serve and complete each plate by placing a quarter of burrata on top of the gnocchi. Serve immediately.
WISDOM PILL
Burrata is a sister of mozzarella, but it has a soft heart made of pasta filata and cream. Its taste is delicate, sweet, and soft, so it goes well with everything savoury, from mussels, to tomatoes, and cured ham.
