Method

Cut the bacon into small squares or whatever shape you prefer. Peel a quarter of a lemon and cut the zest into thin strips. Place a slice of salmon as evenly shaped as possible on top of the cut canapé. Add a pinch of stracciatella and finish with the lemon zest. You can keep the canapés in the fridge for a few hours before serving or eat them straight away.
