- 50 g of Sabelli burrata stracciatella
- 4 slices of aubergine
- 1 tablespoon of sun-dried tomato pesto
- Extra virgin olive oil, salt to taste

Method
Grill the aubergines on a non-stick griddle; season with salt and extra virgin olive oil. Melt the bread in the oven at 180°C for a few minutes. Prepare the sandwich by placing the dried tomato pesto on the base, then the aubergines, and finally the stracciatella di burrata. Complete with a drizzle of raw extra virgin olive oil and cover the sandwich. Eat immediately.
